Brian Rubenzer – Owner & Executive Chef

Brian’s career started at the tender age of 22 when he was promoted to Executive Chef at the Pool and Yacht Club. During this time he was taken under the wing of Danish Master Chef Kaj Sorensen. Brian quickly became very popular with the members through his style of food that he learned from St.Paul College Culinary and Lake Elmo Inn. In 2002 Brian won 1st place with Chef Jeremy DeBruzzi at the Winter Carnivals Ice Carving contest. One day at the club there was a new server that started that was very cute with spiky hair, it was love at first sight and her name was Mollie Murray.

9 Months later the couple moved to South Carolina where they both worked in 3 very popular restaurants. Family pressure brought them back to Minnesota and Brian was offered the position of Executive Chef at the AAUW’s College Club on Summit Ave. During this time Brian catered over 200 weddings and was featured in the Eat Section for the Pioneer Press.

In 2005 Brian’s brother Ken Rubenzer who was a Real-estate Investor, made the suggestion to Brian. He told Brian that he should buy his next job and the perfect opportunity was right in front of them. Brian and Mollie purchased Ollie’s Kitchen and hit the road running. They changes the name to Lettuce Cater and tripled the sales in the first 4 years. The last 7 years Lettuce Cater has won many awards.

Brian and Mollie have been married since 2007 and have two beautiful children Jameson Kenneth who is 3 and Isabella Grace and she is 1 and a half. The Rubenzer’s are expecting their 3 baby early July 0f this year. Family is very important to Brian and loves being a father and husband.
